Why don't you go play somewhere, capture the video, then ask permission to use the video, obviously promising to keep their logo's or watermarks present?
Might help if you actively promote the said group and state you will use said video surrounded with advertising for them.

You only get the "You Have Won" messages if you have placed a bet. If you're just watching, with a balance you'll be able to record and not get the win messages.
Would be helpful to know what you're intended use is for the video, as I have some other suggestions that may give you what you want.

I am in a country that makes it very difficult to set up an online casino account. I used to have an online account and am quite experienced.
I would like to make a video overlaying my comments about what is going on regarding playing baccarat online with a live dealer, or even non-live.
I think this sort of information would be useful to a beginner and I have not found anything like it.
I would, of course, blur out any reference to the actual casino.

However, why would the affiliate program for casino x supply you with a video for you to use to promote casino Y?
When you say you will remove the brand name, basically, you are clearly asking to go against the terms of the copyright owners.
You should be very careful not to superimpose a different brand name or logo over the video, and by not being willing to give credit to the operator where the video was captured, there could be scenarios where the operator might claim that your use of the video does not follow fair use rules.
Again this gets back to the fact that you really should be in discussions with at least one of the affiliate programs you plan on promoting with such a video, since they might have an solution for you.

Nowhere did I say, nor will I, promote casino Y using casino X video.

My only intention was to create a generic video explaining to beginners what is happening. Sigh.
Please do not read anything more 'sinister' into what I thought was a very simple and I assure you innocent request.
If you can't get access then it's going to be difficult for you to "record" anything yourself.
There are ways to remove the overlayed player GUI so you just get the stream, which I guess is what you want - but that really isn't representative of playing online.
As for tutorial videos there are loads of channels on Youtube with them for all games, mine included. I do have access to play and if I don't I contact the software providers to see if I can get access to their demo systems - it's taken me years of building trust with them to get this level of access so you're unlikley to get it first go.
Some providers have access through their websites - but these tend to be the Asian facing brands. You could try a few of those, no VPN would be needed. As for copyright issues, as long as you mention the software provider in your stream you'll be alright - it's free advertising for them.

I did not assume anything, but based on your statement where you wanted to remove the operator's logo or artwork, if you are placing it on a site promoting such games, and there was any advertising that promoted anything other than that operator, then in fact the intention could be assumed by the operator.
Personally, even if you were promoting other brands, even other brands for the baccarat game on the same page, it would likely not be harmful to have the logos or brand name on the video, and giving them credit with a statement like "thanks to casino x for supplying the video, you can play live baccarat there as well as our other sponsors listed below, since they also use the same live gaming software" (or similar).
Since you haven't mention the brand of specific baccarat games you are looking at, if that software provider also has a presence in other countries, you might be able to find a brand where you CAN create an account to do your own capture.
